Department Summary

Michigan Dining comprises nineteen on-campus cafes and markets, nine residential dining halls, Michigan Bakery, and the Michigan Catering unit. Job Summary

Support the department with nutrition expertise and provide consultation services to Michigan Dining staff, students, and guests. Support the recipe development process and maintenance of the menu management recipe database from product and ingredient research to final recipe publication. Ensure allergen and trait identification and audit recipes for accuracy and completeness. Develop and deliver training and outreach presentations on nutrition topics. Supports all menu development including the campus childcare centers. You will report to the senior culinary and nutrition support specialist. Find a complete job description here.

Responsibilities*

Culinary Systems Support (50%)

  • In collaboration with the Campus Executive Chefs and others, manages the recipe development process and audits recipes.
  • You will assist chefs with product research and audit product testing.
  • Manage the maintenance of the menu management application nutrition database.
  • Ensures the ingredient, nutrition, allergen and trait information is accurate for all items in the database.

Nutrition Support (50%)

  • Provide guidance and direction around nutrition issues for unit-level operations managers and nutrition staff.
  • You will consult with individual students with special dietary needs; support other staff who are consulting with individual students; make referrals to University Health Services dietitians. Send regular email communications to students with special dietary needs.
  • Direct the activities of nutrition and dietetic interns from the School of Public Health.
  • Conduct and oversee training programs related to allergen management, food safety and cultural and religious food customs and other nutrition topics.
  • Support with investigations related to allergy incidents; consult with affected individuals.
  • Help develop childcare menus and compliance with NAEYC standards and food allergy compliance.
  • Provide support with the procurement process for the department.
  • Support departmental projects including student engagement and Diversity, Equity and Inclusion.

    Required Qualifications*

    • Bachelor's degree in a nutrition-related field of study.
    • Registration with the American Academy of Nutrition and Dietetics.
    • Completion of approved dietetic internship program or equivalent combination of education and practicum experience.
    • Knowledge of large-scale recipe development and dining trends.
    • Knowledge of basic computer applications.
    • ServSafe and HACCP certified within 60 days from date of hire as a condition of employment. If the certification is not acquired during the 60-day period, employment will be terminated. Certification must be maintained as a condition of employment.
    • Eligible to work in the United States.

      Desired Qualifications*

      • Experience in nutrition-related research.
      • Experience developing nutrition education programs.
      • College/University food service experience.
      • Experience with food menu management software.

        Additional Information

        Working conditions

        • Variable schedule that may include weekday hours, some weekends and holidays.

        Physical requirements

        • Able to maintain a static position for extended periods.
        • Able to assist with events and service in our dining halls, cafes, markets and at catering events.
        • Ability to move and transport objects weighing 25-30 pounds.

        Additional Information

        Selected candidates whose start date is after 4/1/2024 or before 8/31/2024 will not be eligible for the university FY 24-25 salary/merit plan unless otherwise notified.

        This role may have reporting obligations under Title IX and Clery.

        Authorization to work in the U.S. is a precondition of employment and applicants for this position will not be sponsored for work visas.  

        Salary may vary depending on qualifications, experience, and education of the selected candidate.

        Relocation will not be offered for this position.
